The first day of the new edition of the iStill Certified Distilling Workshop has started. The students have just been trained in my theory of distillation, called the Holy Trinity of Distilling. And to put theory to practice, they are currently doing a finishing run on the iStill Mini. Using organic 12.5% strong white wine, they are making a brandy.
