Making Single Malt Whisky (2)

We did a great run last week and are currently cleaning up after ourselves. We made some 300 liters of low wines. Next mash and fermentation cycle will start coming Wednesday. We’ll use the resulting beer, together with the low wines, from the previous run, to perform a 1.5 distillation finishing run.
